Ascorbic acid is a powerful, fast-acting antioxidant. It is commonly used in white wine winemaking to protect against oxidation during racking and bottling. It quickly converts dissolved oxygen to hydrogen peroxide, which prevents oxidative enzymes from reacting with the wine or beer and causing browning.
The recommended method for adding ascorbic acid to your wine or beer is to mix the appropriate amount directly into your brew just before bottling. The suggested dosage for each gallon of liquid is 1/8 teaspoon of ascorbic acid. If necessary, up to 1/4 teaspoon of ascorbic acid may be added per gallon, but only if 1/16 teaspoon of potassium metabisulfite or 1 Campden tablet is added at the same time.
