Beginning as a yeast blend based on wild-caught isolates captured by Milk the Funk homebrewers in the United States, Mud King is a blend of over 30 different wild-caught isolates, including some captures from natural wines and developed French ciders. in part by DeWayne Schaaf.
Recommended for secondary fermentation: primary ferment to 70% attenuation, then add Mud King. Allow to age 6 to 10 months at 65-75°F. In these conditions, expect the acidity to be more subdued, with strong pear notes, Brett pushing a note of overripe tropical fruit.
