Campden Tablets - Sodium Metabisulfite
Campden Tablets – Metabisulfite for brewing, winemaking, and water treatment.
Campden tablets are especially useful during wine and cider production to protect color, flavor, and aroma during processing and bottling stages. Sodium metabisulfite is an inorganic compound with a purity greater than 99% (Na₂S₂O₅) that can be used to sterilize juice and wort, sanitize certain equipment, or remove chlorine and chloramine from brewing water.
Very popular in the world of craft brewing and winemaking, Campden tablets help improve the quality, stability, and freshness of your fermented creations.
Uses of Campden tablets

- Protection against oxidation of wine and cider
- Stabilization before bottling
- Helps prevent bacterial and wild contaminations
- Sanitizing certain fermentation equipment

Benefits
- Easy to dose and use
- Quick dissolution
- Improve stability and preservation
- Reduce off-flavors caused by chlorine
- Essential product for brewers and winemakers
Usage
Sterilization of wort, wine, or fruit juice
- To eliminate any mold or bacteria, crush and dissolve one Campden tablet per US gallon (3.8L) in a little warm water.
- Stir carefully
- Let the liquid rest for about 24 hours.
This period allows the SO₂ to:
- to inhibit undesirable microorganisms
- to help protect aromas and color
- to allow time for excess sulfite to dissipate before fermentation
- After the recommended resting time, add your yeast according to your recipe.
Removal of chlorine and chloramine
Recommended dosage
- 1 Campden tablet treats about 20 US gallons (75 liters) of water.
For smaller volumes:
- 1/2 tablet ≈ 40 L
- 1/4 tablet ≈ 20 L
The exact dosage does not need to be ultra-precise for water treatment, but there is no need to add too much sodium metabisulfite.
Usage steps
- Crush the tablet into powder to facilitate its dissolution.
- Add the powder directly to your cold or hot water.
- Stir the water gently to disperse the product well.
- The treatment usually acts very quickly:
- chlorine is neutralized almost instantly
- chloramines often take less than 5 minutes
After that, the water is ready to be used for brewing.
Important usage notes
- Use according to your recipe, winemaking protocol, or brewing instructions.
- The dosage depends on the application, batch volume, and type of beverage.
- Let the treated must or juice rest according to the manufacturer's recommendations before adding the yeast.
- Keep the product well sealed in a cool, dry place.
Campden tablets are a simple, effective, and economical solution to improve the quality of your brews, wines, and fermented beverages while protecting their aromas and freshness.
