Crystal 120L from Briess is a crystallized and drum-roasted malt. It helps improve foam hold, viscosity and provides a golden hue to the wort with a sweet taste similar to candy and dried fruit. It evokes pronounced flavors of caramel, light burnt sugar, raisins and prunes.
Suggested levels of use according to styles.
1-3% for a balanced pilsner.
5-10% in lagers ranging from Vienna and Oktoberfest to dark lagers.
5-10% for a multitude of beers, ranging from pale ales to bitter IPAs, including porters, stouts and barley wine.
10-15% in various styles, such as doppelbock and barley wine.
