LalBrew NovaLager™ is a true hybrid low-fermentation yeast Saccharomyces pastorianus from the new lineage of group III that has been selected to produce pure lager beers with typical flavors and superior fermentation performance. LalBrew NovaLager™ is a robust lager strain with ideal characteristics for lager production, including fast fermentations and high attenuation. Its characteristic organoleptic profile is very clean with light esters across a wide temperature range. LalBrew NovaLager™ has been selected using classical and non-GMO selection methods to obtain a new hybrid strain Saccharomyces cerevisiae x Saccharomyces eubayanus that defines a new lineage of lager from group III distinct from all other traditional strains Saccharomyces pastorianus. This strain is a low producer of VDK/diacetyl and utilizes patented technology from the University of California Davis (USA) that inhibits hydrogen sulfide (H2S) production, thereby reducing the maturation time associated with lager production.
