Kveik is a Norwegian word meaning yeast. In the Norwegian farming tradition, Kveik was preserved by drying and passed down from generation to generation. Kveik is the original traditional dry yeast! The LalBrew Voss™ strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980s and generously shared it with the brewing community. LalBrew Voss™ supports a wide fermentation temperature range between 25 and 40°C (77-104°F) with an optimum between 35 and 40°C (95-104°F). Very fast fermentations up to complete attenuation are achieved with an optimal temperature between 2 and 3 days. The flavor and aroma profile is consistent regardless of the chosen fermentation temperature: neutral with subtle fruity notes of orange and citrus. Flocculation is very high, producing very clear beers even without filtration or the use of technological aids.Strain: Saccharomyces cerevisiae
