Unlike most rolled oats, which are not malted, Simpsons Golden Naked Oats is a crystallized oat malt, stripped of its husk which provides a subtle nutty flavor. It colors the wort with a light golden hue while adding body and increasing mouthfeel.
Although this unique ingredient is not a traditional component of any style of beer, it works well in malty or full-bodied beers like Nut Brown Ales and Stouts.
Crystal (or caramel) malts are gently cooked during malting. Cooking triggers the enzymatic conversion of starch into fermentable sugar and caramelizes some of the sugars as the malt reaches its final color. This removes the need to add crystal malts to the mash and ensures that some of the sugars will not be fermented by the yeast to sweeten the beer.
