LalBrew NovaLager™ is a strain of Lager-type beer yeast with the ideal characteristics for making bottom-fermented beers, including fast fermentation rate as well as high attenuation.
LalBrew NovaLager™ is a true bottom-fermenting Saccharomyces pastorianus hybrid from the new Group III line that has been bred to produce neutral lagers with distinct flavor characteristics and superior fermentation performance.
The distinct flavor profile is very neutral, light esters over a wide temperature range.
This product is the result of research and development by Renaissance Bioscience Corp. (Vancouver BC, Canada) in partnership with Lallemand Brewing.
LalBrew NovaLager™ has been bred using conventional and non-GMO breeding methods to obtain a novel Saccharomyces cerevisiae x Saccharomyces eubayanus hybrid strain that defines a new Group III (Renaissance) lager lineage distinct from any other traditional Saccharomyces strain pastorianus.
This strain is a low VDK/diacetyl producer and uses patented technology from the University of California, Davis (USA) that inhibits the production of unpleasant odors of hydrogen sulfide (H2S), thus reducing the time of maturation associated with the production of lager beer.
