This strain of French Saison, with citrus and slightly phenolic notes, is so attenuating and reliable that some joke it could even ferment a shoe. The French Saison strain provides excellent mouthfeel consistency and produces well-balanced beers. It is perfectly suited to all traditionally aromatic Belgian styles and pairs remarkably well with hop and spice aromas.
This strain is positive for the STA1 gene, an indicator of the presence of Saccharomyces cerevisiae var. diastaticus. It can ferment certain dextrins that are normally non-fermentable, resulting in a very high level of attenuation and particularly dry beers.
