ABV AROMAZYME is a food grade enzyme preparation with high glycosidase activity, derived from a selected strain of Aspergillus niger. It is composed of β-glucosidase enzymes capable of hydrolyzing glycosidic bonds, releasing monoterpene alcohol compounds and glucose. It was developed to increase the complexity of the aroma and flavor profile of hops in beer. Applying ABV AROMAZYME during fermentation offers brewers the opportunity to improve their hop utilization by releasing additional volatile flavor compounds, thereby decreasing overall hop quantities or using less sophisticated hop varieties.

  • Increases the diversity of hop flavors and aromas by altering the ratio of specific terpene compounds
  • Improves mouthfeel and drinkability of beer by reducing unpleasant harsh bitterness
  • Slightly increases wort fermentability
  • Expresses more character from less sophisticated hop varieties

USE :
The recommended dosage is 5g/hL (1g/20L).
ABV AROMAZYME has an optimal activity between pH 3.5 and 6.5, although lower,
activity is still observed at pH 3.0 for use in sour beers. The optimum temperature range is 15 to 65°C.
Dilute the enzyme in an adequate amount of water (~1g in 10ml) to ensure
distribution within the fermenter.
